Many of the large military airshows use their own ATC to help with the airshow. Most of the other airshows use their own "Airbosses," contract people with ATC or other pertinent airshow experience that can handle managing the acts, timing, sequence etc. The performers usually prefer to have a professional "Airboss" running the airshow.
