Only the host (first player to enter a Flight) can manipulate Flight and ATIS information. Let's say Flight 1 is empty. Click on the Flight 1 button. This should log you in to Flight 1. A new window called Flight 1 Info (if I recall correctly) will appear. If it doesn't, you login cookie has probably expired or you never accepted one, so you'll need to log in first and then click Flight 1 again.
On that window you'll see a box to enter Flight Information (yes, such as an IP address is appropriate as well as anything you want to let others know about your flight), and a button that'll bring up an ATIS information dialogue box. Please remember that Flight Info and ATIS info windows are only available to the host of the session.

The information you enter will not appear until the Flight Room main window refreshes (or you click refresh to manually update the screen).

Yep, that's pretty much it for now. The Flight Rooms are still a work in progress and no where near where we want to take it, but it's a step in the right direction. We've added some limited functionality so the area would be usable (although klunky and still somewhat disjointed at present).

Simply shut down the Flight Info window. You can shut the main Flight Room window and you'll still appear in the flight to anyone that joins the room later, but once you shut the Flight Info window, you'll be removed from the room's pilot roster. The same applies to anyone joining a flight. Shut the pilot roster window and you'll be removed from the flight's pilot roster.
